You Don’t Like My Muffins?

Ok, that phrase cracks me up EVERY time! Don’t worry about why, it’s a story from my past that very few people know and really, probably even less people care. Anyway, I did not have that problem today. In fact, I had quite the opposite problem! I made a batch of crazy-healthy mini-muffins AND to top it off I accidentally over-baked them so they were extra crispy and nearly black on the bottoms. Not actually burnt, just really really close! Anyway, they finished in the oven just as the kids were arriving home from school so I let each of them try one (thinking “yeah right, like you guys’ll eat these!) and I asked them what they thought of my muffins. Elise said she liked it, Jacob and Cameron said they’re okaaay, and Elena made a horrible face and spit hers into the kitchen garbage. So the muffins seemed safe and I went to my roon to attempt to finalize a scrapbook page. Cut to a half an hour later, the kids are playing Pokemon or something and I see a stack of mini-muffins on a pillow in Elise’s room where they are playing. They had like 6 in there! So I told them to put the muffins back, which I swear I saw them do, but five to ten minutes later when I went into the kitchen to grab a muffin and a little milk there were NONE!!! I called the kids out and they brought me three little muffins that hadn’t yet been devoured. I made 24 muffins. I ate three. There are two left. And I had to pry the remaining two away from Cameron so that there would be a muffin for Josh to try when he gets home!

    It sounds like you had some muffin snatchers! Do we get the recipe of these crazy healthy mini muffins???

    Sure, first, I started with a box mix of Fiber One apple cinnamon muffins. Never heard of them? They’re new. I don’t know if they make any other flavors yet. Anyway, the recipe says that you must add egg and oil to the mix, which I replaced with Better ‘n Eggs egg substitute (slightly cheaper than Egg Beaters unless you have a coupon.) and milled flaxseed (which, along from adding even MORE fiber and some protein, also adds omega 3 fatty acids which is fabulous for me because I do NOT eat fish!) You could probably make something similar from scratch without using the (I admit, rather expensive) Fiber One box mix but I am not a made-from-scratch kind of person.
